Ingredients:
- 250g/2 cups Asparagus
- 180g/1 cup yellow onion
- 1 1/2 tablespoon vegetarian oyster sauce
- 1/2 tablespoon peanut or vegetable oil
Method:
Step 1: Preparing the Ingredients (Mise en Place)
- Thicker asparagus spears can have a more woody area at the bottom. You can peel this stringy outer skin by using a vegetable peeler then cut asparagus into 2-inch diagonal pieces.
- For the onion, peel and cut into 1 cm square pieces.
Step 2: Stir-fry the Asparagus
- Heat a frying pan over high heat, add the oil. Once the oil becomes lightly smoking, throw in the onion and stir-fry for 10 seconds or until they turn golden or brown.
- Add cut asparagus. Stir-fry asparagus for 1 minute.
- Turn the heat down to low, stir in the vegetarian mushroom oyster sauce.
- Once all vegetables are coated in sauce, remove from pan and serve right away with rice.
