Ingredients
- 30 Medjool dates
1. Peanut Butter & Walnut Dates
- 6 Medjool dates
- 60g/2oz peanuts butter
- Topping/Garnish: Some toasted walnuts
2. Vegan Cream Cheese and Almond Dates
- 6 Medjool dates
- 65g/2.3oz vegan cream cheese
- 1 teaspoon toasted black sesame seeds
- 1 teaspoon toasted whole (unhulled) sesame seeds
- 1-2 teaspoon toasted sunflower seeds
- 1-2 teaspoon toasted pumpkin seeds
- Topping/Garnish: Some toasted almonds and mint leaves
3. Pistachios Tahini Stuffed Dates
- 6 Medjool dates
- 55g/2oz homemade or store-bought tahini
- 30g/1oz toasted pistachio nuts, finely chopped
- Topping/Garnish: Some toasted pistachios and sesame seeds
4. Cranberry Almond Butter Dates
- 6 Medjool dates
- 60g/2oz almond butter
- 30g/1oz dried cranberries, finely chopped
- Topping/Garnish: Nasturtium flowers petals
5. Secret Rum & Raisin Dates
- 6 Medjool dates
- 30g/1oz seedless black raisin, marinated with 3 tablespoons rum
- 60g/2oz almond butter
- 1 tablespoon rum
- 1 tablespoon maple syrup
- A pinch of salt
- Topping/Garnish: 50g/1.7oz 70% cocoa chocolate, to garnish
Method
Step1: Removing Dates Seed
- Slice open Medjool date down the centre then extract the seed.
Step 2: Preparing and Assembling the Dates
- Combine and mix the stuffing ingredients evenly for each of the recipes in 5 small separate bowls.
- Use a spoon or other kitchen tools to fill each date with the various filling mixtures according to each recipe. Then top each date with its specified garnish. Enjoy immediately.
Notes: Peanut Butter & Walnut/Vegan Cream Cheese and Almond Dates: It’s best to enjoy these dates on the same day because the walnuts would lose their crunchiness after being soaked in peanut butter and vegan cream cheese for a day or two. If you are short of time, just use store-bought tahini. Eat these Pistachios Tahini stuffed dates on the same day because pistachios would lose their crunchiness after sitting in moist tahini paste for a day or two. Cranberry Almond Butter Dates: Instead of an edible flower, you could decorate and sprinkle these stuffed dates with chopped nuts such as pecan, walnut or macadamia. Secret Rum & Raisin Dates: To boost the taste of raisins flavour with rum, marinate the raisins for at least 24 hours before making the stuffed dates. The taste of raisins will become much stronger and better when marinated for a few days or weeks in advance. |
