With just asparagus, onion and vegetarian oyster sauce, this flavorful easy to make vegetable dish is a star!   The combination of caramelized onion, crunchy asparagus and sweet sauce give you a satisfying, healthy and hearty side dish. Watch the YouTube video for step by step guidance!

Makes: 4 Servings Prep time: 10 minutes

Cook time: 5 minutes

Ingredients:

  • 250g/2 cups Asparagus
  • 180g/1 cup yellow onion
  • 1 1/2 tablespoon vegetarian oyster sauce
  • 1/2 tablespoon peanut or vegetable oil

Method:

Step 1: Preparing the Ingredients (Mise en Place)

  1. Thicker asparagus spears can have a more woody area at the bottom. You can peel this stringy outer skin by using a vegetable peeler then cut asparagus into 2-inch diagonal pieces.
  2. For the onion, peel and cut into 1 cm square pieces.

Step 2: Stir-fry the Asparagus

  1. Heat a frying pan over high heat, add the oil.   Once the oil becomes lightly smoking, throw in the onion and stir-fry for 10 seconds or until they turn golden or brown.
  2. Add cut asparagus.  Stir-fry asparagus for 1 minute.  
  3. Turn the heat down to low, stir in the vegetarian mushroom oyster sauce.
  4. Once all vegetables are coated in sauce, remove from pan and serve right away with rice.
