This special festive stir-fry broccolini is using nuts, seeds and a natural mixture as a topping to boost flavour, nutrition and crunch.  This delectable dish will surely become a favourite at the Christmas and New Year dinner table.

Ingredients

  • 200g-600g/7oz-21oz  Broccolini (so tasty…it finishes quickly..See Notes)
  • 2 garlic cloves, sliced
  • 1/2 tablespoon extra virgin olive oil
  • 1 tablespoon Shao-Hsing wine or dry sherry
  • 1 tablespoon low sodium soya sauce or tamari
  • 1 teaspoon sesame seed oil

For Nuts & Seeds Mixture

  • 25g/¼ cup walnuts
  • 25g/¼ cup pecan nuts
  • 20g/2 tablespoons sunflower seeds
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method

Step 1: Toasting Walnut, Pecan and Sunflower Seeds

  1. Heat a medium-sized frying pan over medium heat, throw in pecans and walnuts.  Then use a spatula to stir the nuts occasionally until they turn brown and fragrant.  Alternatively, use a “pan tossing” technique to toast the nuts. The whole process will take about 2 to 5 minutes.  Remove toasted nuts from the pan and place in a plate to let cool. 
  2. With the same pan, add sunflower seeds, similarly stirring or tossing the seeds occasionally for 2 – 5 minutes until browned and fragrant.  Place the toasted seeds on a plate and set them aside to let cool.

Step 2: Preparing the vegetables

  1. Older and bigger broccolini will have harder skin, with a peeler, peel the hard skin off the broccolini, wash and steam them for 2 minutes then remove and set aside.
  2. Slice garlic into thin slices and finely chop the parsley.
  3. Measure and gather all other ingredients then set them aside.

Step 3: Preparing the Nuts & Seeds Mixture

  1. Put the nuts and seeds into a food processor or blender and pulse for a few seconds at a time to chop the nuts and seeds into sand-like forms.  It’s alright if the nuts and seeds are not evenly chopped as it enhances the nuts and seeds flavour and texture.
  2. Transfer chopped nuts and seeds into a bowl, add garlic powder, onion powder, nutritional yeast and chopped parsley then mix them thoroughly and set aside. 

Step 4: Stir-fry Broccolini

  1. Heat a frying pan over medium heat, add the oil.   Once the oil is hot, throw in the sliced garlic and stir-fry for 30 seconds or until golden brown.  Mix in the steamed broccolini.  
  2. Turn off the heat and stir in Shao-Hsing wine, soya sauce and sesame seed oil.

Step 5: Serving the Broccolini

  1. Place stir-fried broccolini coated with sauce on a plate then sprinkle nuts and seeds mixture on top.  Serve immediately.

Notes:

  1. To toast Walnuts and Pecan nuts in the oven- heat oven to 175°C/350°F and roast Walnuts & pecans nuts for 7-8 minutes, turning halfway through.
  2. The nuts and seeds used in this recipe are loaded with dietary fibre, protein, healthy fats, vitamins, minerals, and antioxidants.  If you are allergic to these nuts and seeds, swap with different types that are safe for you for e.g almond, hazelnuts, brazil nuts and pumpkin seeds.  
  3. This nuts & seeds mixture can be used as a topping to your cooked vegetables such as cauliflower, asparagus, broccoli and even boiled potatoes.
  4. This dish is so tasty and addictive that you need to get ready more broccolini on hand as your cooked brccolini with nuts and seeds mixture might be eaten before the official Christmas or New Year dinner starts.  The nuts and seeds mixture is enough for three 200g serving of broccolini at a time.
