Malay Vegan Spicy Soup

This Malay spicy soup usually uses chicken or bone as the main ingredients. I have created a healthy low-fat version by using dried shiitake mushrooms to replace the meat. The National Library of Medicals has published a review in Oct 2020 giving substantial evidence which suggests that spices such as – cinnamon, ginger, cloves, cardamoms, cumin, coriander, black pepper, garlic, and onions are known for their antimicrobial, antioxidant, anti-inflammatory and several other useful properties. Therefore this hearty, aromatic, and spicy vegan homemade soup are truly essential for immunity boosting.

Apam Balik (Malaysian Pancakes) )|Mànjiānguǒ 曼煎粿/Tortitas Malayas

Apam Balik is also called peanuts pancake, mànjiānguǒ, martabak or terang bulan. This Malaysian authentic pancake is a comforting and yummy popular street food, either eaten for breakfast or as a snack. I tweaked this pancake recipe into a vegan version. This healthy vegan pancake is filled with crushed peanuts, banana and strawberry then served folded in half like the street vendor style. It is remarkably delicious and crispy if eaten hot or straight out from the pan.

Nyonya Bubur Cha Cha (Malaysian Sweet Potato and Coconut Milk Dessert) 《娘惹摩摩喳喳/Nyonya Gachas cha cha》

My grandmother is a Nyonya Baba (Mixed race of Malay & Chinese) in Malaysia.  This recipe is how she used to make the dessert.   I tweaked the recipe using 3 colour potatoes and used pandan leaf to naturally colour the tapioca jelly.   This delicious and satisfying dessert is loved by all ethnicity in Malaysia and Singapore.
