This easy recipe uses soya mince, mushroom seasoning, miso paste, liquid smoke and BBQ sauce to make meaty vegan burgers you will love. The beauty is that soya mince provides texture similar to real mincemeat.

Ingredients
To Soak Soya Mince
- 100g/3.5oz soya-mince (soy mince)
- 500ml/2 cups boiling water
- ½ tablespoon mushroom seasoning
- ½ tablespoon miso paste
To Stir-fry Soya Mince
- 1 medium-size yellow onion, chopped
- 1 tablespoon BBQ sauce
- ½ tablespoon mushroom seasoning
- ½ teaspoon liquid smoke
- Salt and black pepper to taste
To Assemble Burger
- 1 wholemeal burger bun
Method
Step 1: Soaking Soya Mince
- To soak the soya mince, pour 500ml boiling water into a big bowl.
- Add mushroom seasoning and miso paste then whisk to mix the ingredients and make sure the miso is fully dissolved in the water.
- Next, add the soya mince and soak for 20 minutes.
Step 2: Stir-frying Soya Mince
- Heat a frying pan over medium-high, dry fry chopped onion until softened and lightly golden, which takes about 5-7 minutes. Add a couple of tablespoons of water at one time when the onion is sticking to the pan.
- Add soaked the soya mince and stir-fry for a minute.
- Add BBQ sauce, mushroom seasoning, liquid smoke and stir to mix everything evenly.
- Before dishing out, add black pepper and salt according to taste.
Step 3: Assembling Soya Mince Burger
- Simply place 3-4 tablespoons of cooked mince between the burger bun and eat with the prepared side dishes.
Notes: The side dishes we eat with this burger are cooked peas, cauliflower, broccoli, roasted red baby potatoes and brown mushroom. You can accompany your burger with any side you love. Liquid smoke infuses delicious flavour to your soya mince. If you do not like to use liquid smoke, substitute with smoked paprika, or chipotle powder. |
